Guiltless Addiction #1: tasty little sweet potatoes

I just LOVE baked sweet potatoes. They are so juicy, and, like the name suggests, sweet! Tonight I enjoyed a sweet potato with my dinner and I savored every bite of it. (Seriously, go buy one, wrap it up in foil, and bake it...you'll never be the same again!)

There is more to these little guys than just sweetness. Sweet potatoes are packed full of vitamin A and antioxidants. What more could we ask for?

Breakfast #1

I'm a morning person. Even though it is my summer vacation, I find myself waking up at 6am every day full of energy (I know, I know, how do I even survive college life?). I jump out of bed, throw on my Nikes, and hit the closest 24 Hour Fitness.
This morning I was soooo hungry as I drove back home. Breakfast is my favorite meal of the day and I was really looking forward to something delcious as soon as I walked in the door.

Today's Breakfast:
Veggie Egg-white Scramble and 1/2 a Toasted Whole-Wheat Pita.

In a non-stick skillet I heated spinach, bell pepper, and a little bit of cilantro and jalapeno for an added kick. Once my veggies were warm I added 3 egg whites and scrambled them around until they were cooked. Meanwhile, I popped 1/2 a Sahara Whote Wheat Pita into the toaster.

Once everything was done, I placed everything together on a plate, with a little bit of ketchup (mmm gotta love eggs and ketchup). I broke the pita into smaller pieces and it tasted delicious with egg scramble on it.

My tummy was happy til lunchtime.

All's fair in love and food

I just have to know, who woke up one morning and said, "Mmmm I'm craving something fried, something salty and something chocolate...I've got it! Let's deep fry a Snickers!"?

That doesn't even sound appetizing. :P

I can have a pretty weak stomach sometimes. My digestive tract doesn't always agree with adventurous choices, and just thinking about that deep fried disaster makes me wanna reach for the Pepto.

Yesterday afternoon, I made a visit to the county fair with two of my girl friends from highschool and discovered that if you are looking for a tummy-friendly snack, the fair isn't the best place to start.

However, one particular item stood out to me above the rest.

I award the Gold Medal of all fair munchies to the corn on the cob. A juicy, grilled ear of corn is not only delcious, but also fun to eat! Best of all, you can enjoy the festivities of the fair, without drawing attention to your healthy choice. You can still have fun, savor the decadent taste, and munch alongside your friends. Most vendors allow you to add your own condiments, so easy on the butter, but add as much seasoning as you want. Mmmm.

My name is Kristin, but some have called me a health nut. I prefer to use the term "mindful muncher".Mindful Muncher: (n) one who munches on fresh, healthy food; one who consciously strives to make healthy choices, and enjoys it. (okay yeah...I just made that up)

I'm not into fad diets, starving yourself, or eating salads every day for breakfast, lunch and dinner. I'm into real, good food. Food that promotes excellent health and nourishment. Food that gives me the strength and energy I need to live an active lifestyle.
